PEPPER AND OLIVE STEAK
1 1/2 pound beef flank steak
1 tablespoon vegetable oil
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 cloves garlic, chopped
1 (6 ounce) jar pimiento-stuffed olives drained and chopped
1 1/2 teaspoons oregano leaves
1/4 teaspoon pepper
1/2 cup beef broth
Broil steak 3 inches from heat, 6 minutes per side for rare or until desired doneness.
While steak is cooking, heat oil in a large non-stick surface skillet until hot. Add remaining ingredients except oregano, pepper and beef broth. Cook and stir vegetables until onion is tender. Add remaining ingredients, except steak, and cover. Simmer until peppers are tender.
Slice steak across the grain into thin slices. Top with vegetable mixture.
Makes 6 servings
