Chicken Salad Sandwiches

Hi, Beth--

I just made these and they really went over well--no specific measurements, just pretty light on everything. I chopped white and dark meat chicken and added really finely chopped green pepper, valdalia onion and celery. I served them on (this is weird) wheat dinner rolls and mini croissants--I made crab meat sandwhichs the same way--and none of those were left.
