Recipe(tried): Chicken Salad Sandwich

I've read the other recipes offered and each of them sound interesting and I may give them a try too but my family doesn't like onions in chicken salad so my recipe which I use when we have leftover baked or roasted chicken is fairly simple: Dice the chicken, some celery, mayonnaise, salt and pepper and add celery seed. I'm BIG into celery seed for many things. Let it sit in the fridge for at least an hour. Taste before you refrigerate to see if it's seasoned to your liking. I use the same recipe for shrimp salad except I reduce the pepper and use Old Bay to taste.
