Chirashi sushi
Misc. Sounds like what you're referring to is "chirashi sushi," (which means "scattered sushi") specifically Kansai (Osaka/Kyoto area) style chirashi sushi.
It's base of sushi rice with the other ingredients cut into small bits and scattered over the top. Almost anything can be used as a topping, and it's popular to make at home because it doesn't require any particular skill (as opposed to the nigiri sushi "fingers" served in sushi bars).
