telling you, this particular recipe is based on a recipe by Penelope Casas, from her book PAELLAS, but has my particular suggestions. That book is a treasure. All of Mrs. Casas books are great.
The answer to your second question is yes. I prepare my own Sofrito. I had posted several recipes here at this same Board. A fresh SOFRITO gives character, freshness and a special flavor to Puerto Rican food. The second best option is to buy the frozen one and to improve it with added ingredients (processed also and mixed), as for example, red pimentos, garlic, cilantrillo, etc... Cilantrillo & cilantro are the same herb; culantro is another one.
