I haven't had paella in so long you have inspired me to make some soon.
Your recipe is similar to one my mother used to make ( she got hers from a Southern Living cookbook)it used both sweet and spicy sausages, bacon, and peas, green olives instead of corn.
When I make it, I pare down the quantities of the meats to make it lower in fat, but still rich in flavor. I like the addition of corn and think I will try that.
I have a question. My friend Myra, of PR heritage always cooked with Sofrito, and Recaito she bought in the grocery as condiments. Do you use those, or make your own? Have you posted recipes for homemade?
I want to experiment with more Spanish recipes for the BF, and surprise him.
