BABY VIDALIA ONION PIE
2 lb baby Vidalia onions, thinly sliced
1 stick (1/2 cup) butter
3 eggs, well-beaten
1 cup sour cream
1/4 tsp salt
1/2 tsp ground white pepper
1/4 tsp Tabasco
1 pastry shell, unbaked
grated parmesan cheese
Saute onions in butter.
Combine eggs and sour cream. Add to onion mixture, salt, pepper, and Tabasco. Pour in pastry shell. Top with cheese.
Bake at 450 degrees F for 20 minutes, then at 325 degrees F for 20 minutes or until cheese melts.
Makes 6 servings
