dear eggy,

Kastera is a sponge cake that has a dark, mahogany color top (at least the cakes in jpnz confectionary stores do). I do recall that my grandmother did add lemon juice to the batter, but she did not use honey but granulated sugar as the sweetener. I think she lined the 9" square pan with wax paper before pouring in the batter. Eggy, thanks for your help and interest.
