i tried that jpnz cake rec. found here on tkl this evening just to see if it's what i know (also to induldge myself in a no-added-fat-dessert). it is a sponge cake all right but it's not quite like what mom makes. i added zest of 1 orange in the batter for extra flavor. i would recommend this rec. as a base for decoration as the cake can be split and frosted... Anyway, i now confirm (judging from my taste bub) that mom's has honey in batter (for sure), lemon syrup (i believe she pours the syrup to the hot cake straight from the oven)to add the moist so hers is denser than the one i tried this evening. And it is dark brown on the top. (i remember the top layer was my favorite coz it can be peeled off...) she normally bakes this cake in a long loaf pan (not the regular 9 x 13 but a slimmer and longer version.) she only told me it was a "honey/lemon cake" but she never mentioned about it's origin... could we be looking at the same thing? i dunno... can't locate mom at the moment and she won't be back in another 3 weeks... if what i described above rings a bell, do reply back and i shall ask for her rec. for you "in one month time"...
