Freezing roasted peppers

I agree with Risa -- they freeze very well. Just about every year my husband and I get a BIG basket of peppers (last year we had to use mainly green as red were not that plentiful in our area) and start up the grill. He grills them (as you - in an apartment - would do indoors) until charred, blackedn. Then we put them in a bag (plastic or paper) and close for a few minutes. Then remove and peel off the skin and discard the ribs and seeds. We end up with a HUGE bowl of peppers. All the neighbors know what we're doing!

The way we freeze them is I take plastic sandwich baggies; and put a 'handful' in each baggie - do not really close - just set them on a lined tray and put in freezer until solid. (next day). Then, keeping them in their bags, I put them in a large freezer bag, seal and freeze. I find that 1 bag is 'about' the size of a 7 oz jar.

So we take out 1 or 2 or however many bags we need at a time. They taste delicious. They are usually just a little more 'liquidy or watery' after freezing - but still very very delicious.
