Recipe: Turkey Breast Marsala (using cooked turkey breast slices)

TURKEY BREAST MARSALA

4 to 6 tbsp butter or margarine
8 slices cooked turkey breast (about 1/4-inch thick)
dash pepper
4 thin slices prosciutto, cut in half
1 (8 oz) pkg mozzarella cheese, cut in 8 slices
1/2 cup Marsala wine
chopped fresh parsley

Heat 4 tbsp butter in large, attractive skillet. Saute turkey slices, in single layer, until golden on both sides, 1 minute on each side. Add more butter as needed. Remove turkey slices as browned and keep warm.

Return all slices to skillet, overlapping. Sprinkle with pepper. Place a slice of prosciutto and one of cheese on each slice of turkey. Pour Marsala over all.

Cover and cook 3-5 minutes, or until heated through and cheese is melted. Remove from heat. Sprinkle with parsley. Serve from skillet.
