Frying pan tops

I never really know WHY they don't - but I have what is called a 'universal' cover - bought it in some houseware store a number of years ago -- it must be 12 to 16 inches round - Its flat with a knob and I think has measurements (in circles) for different sizes. Tho its only one. It was inexpensive and was useful. I used it on my Joyce Chen wok too as the one I had didn't have a cover.

Somehow (in my mind!) I've always thought that saute pans (like a frying pan but they have straight sides and usually are a wee bit deeper) have covers and frying pans or skillets usually don't Have no idea how I got this idea - or if there is any truth to it!

However now I have a nice set of Scanpan cookware - and many of their covers (that came with the saute pans, Dutch ovens, etc.) fit on other things ... even on the 2 frying pans I kept!

Usually if you're frying something like eggs - or just browning something to add to a baking dish, etc. ... you do not need to cover. If you're going to be doing something like chicken or veal parmigiana it is better done in a saute pan in my estimation.

I'm sure this is of no real help ... just someone's opinion. Happy cooking.
