Further Adventures in Leeks!

Wanted to thank you all so much, I sauted the white parts only of the leeks & they are very, very tender.I'm having trouble not just eating them this way!!I think my problem before was when the recipes called for white parts & light green parts only, my definition of "light green" was too broad.I planned to make one of the soups that Jackie or Judy posted, but the cupboard is nearly bare here and grocery shopping is at least 40 minutes away, one way. We are out of potatoes, but have mushrooms. We are out of milk(any kind!) but have veggie broth. Since I couldn't wait to try again with leeks, I decided to combine parts of both recipes. Will let you know how it turns out! Then I will be ready to tackle manyhats' gratin and the suggestions from Susan! Thanks again, everyone!
