Hello dear Jeanne: I usually drain the beans before using them

but many people in Puerto Rico do not drain them because they say the original liquid in the can makes them more creamy. The reason I drain them is because my mother used to say that the liquid contains too much sodium or chemicals.

I think your arroz con pollo is perfect. I already have my chicken pieces marinating for tonight. I will use just a little bit less liquid than your recommendation because I like my rice dry, almost al dente. We call that in Spanish "granoso". I am going to translate several recipes from Chef Alice Huyke (Giovanna Huyke's mother) that are absolutely delicious and I will post them for you, dear friend. The advantage of rice is that it is so versatile & healthy.
