Recipe: Sweet and Sour Red Cabbage and Apple Salad (with hot dressing using honey, no oil)

1 medium head red cabbage (about 1 1/2 pounds)
1 large tart apple, peeled, cored and cut into 1/2-inch cubes
1 small sweet green pepper, cored, seeded and sliced into 1/4-inch strips
1 small yellow onion, chopped fine
FOR THE DRESSING:
1/2 cup red wine vinegar
1 tablespoon honey
1/2 teaspoon caraway seeds
1/8 teaspoon ground black pepper
1/8 teaspoon ground cloves
Core cabbage and slice thin; set aside.
In a large heatproof bowl, combine with apple, green pepper and onion. Toss well to mix; set aside.
In a small saucepan over moderate heat, cook and stir all dressing ingredients until the mixture just begins to boil - about 1 minute.
Pour hot dressing mixture over the salad and toss well. Let stand at room temperature 30 minutes before serving.
Easily doubled, if needed.
Makes 4 servings (77 calories each)
