Hi Brenda,Cashew Chicken of this type ..

originated here in Spgfd!The name of the restaurant that originated it was Leongs(Since gone out of business).I dont know why as they had wonderful food!There was a write up in the paper when they opened for business,on this dish.After that other restaurants here took up with it as well.Some dont use white meat chicken.But basically they are pretty much the same sauce.Also I think the secret to the crisp & delicious chicken is the frying in the peanut oil!
Please be sure if you copy it that you realize the amount in the sauce for the thickening is 2Tbls.cornstarch & 2Tbls.water.(I had made a mistake on that when I posted it)I'm glad I brought back some fond memories for you!Mickey
