I really appreciate your comments. I know I'm lucky here in NYC because most (but not all) of the ingredients I need are readily available, but that's not true in many cases. I just wanted to comment on what's considered to be "standard" especially when a person is learning, before taking off on an adapted version. (Nonetheless, everything I do at home is probably adapted to a certain extent because I really don't measure the ingredients!) Adding bonito shavings to your soup is a great idea!! (P.S. -- I don't know if I wrote in my dashi posting, but dashi will keep for a week if you store it in jars in the refrigerator, and you're certainly welcome to boost the amount of bonito than what's called for in the recipe.)

I certainly use nori when I make my miso ramen -- it's my take on the Hokkaido version with seafood and corn, with lots of scallions.
