Recipe(tried): Japanese Teriyaki Sauce

I agree with you, Eggy -- I NEVER use the bottled stuff. Here's my version --
guaranteed to be 100% "authentic"!! :-)

3 Tablespoons regular (koikuchi) soy sauce
3 Tablespoons mirin (Japanese sweet wine)
1 Tablespoon sugar

Put the ingredients in a saucepan. Cook over medium flame until sugar
dissolves -- bring the flame down to low simmer to reduce the mixture. Remove
the pan one step before your desired consistency -- the sauce will thicken more
as it cools down.

Hints and Suggestions:

*Substitute brown sugar or honey for sugar.
*Substitute sake (Japanese rice wine) for mirin.
*Play around with proportions -- some like it sweet, some like it salty.
*Use the best soy sauce you can get your hands on -- it really does make a
difference!!
*Try adding the juice of grated fresh garlic.
