High Temp. Roasting

Last night I roasted a boneless pork loin at 500 degrees. I pulled it from the oven as soon as the meat thermometer hit 160, then let it sit for about 15 minutes. It was one of the tenderest, juiciest roasts I have ever made.
Has anyone roasted foods at this temperature before? Can anyone give me any ideas for other foods cooked in this manner?
