called ROASTING .... it is a big thick book and much of her theory is high temp roasting. I've had it out of the library a few times and it is very good. If your libary doesn't have it and you are interested, check here on TKL - their Cookbook Heaven ...they probably have it for sale at a good price. It is very good.
