Hi Joel!

We must be kindred spririts! I, too, have shelves and shelves of cookbooks, probably a dozen dedicated to Christmas alone. And like you, I like nothing better than curling up with one of my cookbooks at nite (to my husbands great amusement -- hes commented how he has never met anyone who "reads" cookbooks like I do! Cant wait to tell him that you do too!). I am always amazed that while I cant remember where the heck I left my keys, I CAN remember which cookbook I saw which recipe in - lol.

Since you said you cook ahead and freeze, I have a wonderful recipe for Mexican Lasagna that freezes beautifully. Let me know if you like this type of dish and I'll be happy to post the recipe. I'm going to prepare your Chicken with mushroom sauce this weekend for some good friends -- let you know how it goes over.
