I have had this same problem. When this happened I used it as an icecream topping. It makes a wonderful combination. I now make sure I goof at least one batch each time I make it.
It is also good as a sauce for meats or just about anything
that goes well with orages.
Did you use the pectin from the soaked seeds? If not try doing so the next time you make it.
