Recipe: Quick Jambalya

QUICK JAMBALYA

1 Tbsp plus 1 tsp oil and margarine
1 cup diced celery, onions, green pepper
4 small garlic cloves mashed
4 cups canned crushed tomatoes
2 cups cooked long grain rice
12 oz shelled and deveined cooked shrimp
4 oz boiled ham, diced
2 bay leaves
1/2 tsp chili powder
1/2 tsp ground thyme
1/2 tsp ground black pepper

Combine oil and margarine and heat till margarine is bubbly and hot, add diced vegetables and garlic and saute over medium heat until vegetables are soft.

Reduce heat to low, add remaining ingredients, let simmer, stirring, occasionally, until heated through. Remove bay leaves.

To make it a bit spicier you can use more garlic and add some jalapeno peppers. I like this recipe because it is so easy to make and it tastes great.
