Jar Cake Storage Warning

Hi Juanita,

No matter what anyone claims about their successes storing jar cakes, it is a dangerous practice - they cannot be safely stored without refrigeration or freezing. The jar is just a neat container for the cake to be presented in. The 'seal' that happens when the jar is closed is only a vaccuum seal - the cake is not 'canned'. Extension experts say the moist atmosphere in the jars is a breeding ground for bacteria. Keep in mind that this is a low acid product (also including eggs).
