Recipe(tried): Creamy Cheesy Potatoes (repost)

A friend gave me the recipe years ago and It is absolutely delicious! Well worth the effort! Enjoy!

CREAMY CHEESE POTATOES

4 pounds potatoes, peeled, boiled & cooled
1/2 cup margarine
2 tins (10 oz. each) cream of mushroom soup**
1 1/2 cups cheddar cheese, grated
2 cups sour cream
1 cup crushed cornflakes
2 tablespoons margarine

Grate the potatoes into a very large (or 2 small) buttered pan. In a large saucepan heat the margarine with the soup, add the cheese & sour cream and pour over potatoes. Mix lightly with fork. Melt the 2 TBSP. margarine and mix in the cornflakes. Sprinkle over the top of the potato mixture.

Bake at 350 degrees F for 45 minutes.

**Try other cream soups for variety.
