Recipe(tried): Chicken Peach Casserole

CHICKEN PEACH CASSEROLE

1 chicken, cut in pieces, skin removed
2 tablespoons margarine
1 tablespoon oil
1 onion, sliced
1 green bell pepper, cut in strips
1 large can peaches
1 tablespoon cornstarch
1 tablespoon soy sauce
3 tablespoons white wine vinegar
2 tomatoes, peeled and sliced

Brown chicken pieces in oil; cover and simmer for 10 minutes. Put chicken in a casserole dish; set aside.

Saute onion and pepper in skillet, then place over chicken.

Drain peaches and reserve 1 cup syrup. Set aside.

Mix together cornstarch, soy sauce, vinegar and 1 cup peach syrup in the skillet; boil until clear. Add peaches and tomatoes. Pour contents of skillet over chicken.

Cover casserole and bake 40 minutes at 375 degrees F.

SERVING SUGGESTION:
Serve with rice to which some peaches and strips of pepper have been added
