I picked up two of these at a cooking class I attended this fall. One is for parmesan and the other for zesting. I don't know how long they will stay sharp but they are great at the moment. Evidently the idea comes from carpentry and they are very hot with chefs at the moment. One has a handle and the other doesn't which is awkward.
