You said you wanted hot sauce recipes. If you have so many peppers, are you interested in making jelly? I have made 3 different habanero ones this year that we enjoy. We don't eat them as much as one would jelly but rather as a sauce type served with pork, chicken and fish. Very good that way. I have so many that I have been making up the jelly and putting it in the 4 oz canning jars. No doubt several will find themselves becoming Christmas gifts. The three I made use 1) apricot nectar; 2) red bell peppers; and 3) cranberry juice. Make very pretty colored jelly as well as good tasting. If you are interested in the recipes, let me know.
