Recipe: Deep-Dish Pear Raisin Pie for One (with Pastry, Granola or Cereal Topping) (1978)

1 pear, cored, peeled and sliced thin
1 tablespoon raisins
1 tablespoon packed brown sugar
1/2 teaspoon flour
1/8 teaspoon cinnamon
1/2 teaspoon lemon juice
Pastry, Granola or Cereal Topping (recipes follow; optional)
Whipped cream, heavy cream or ice cream
In bowl mix well pear, raisins, sugar, flour, cinnamon and lemon juice. Turn into greased 10-ounce baking cup.
Cover with pastry circle or sprinkle on preferred topping.
Bake in preheated 375 degrees F oven 30 to 35 minutes or until crust is golden.
Serve warm or cool with whipped cream or ice cream.
PASTRY:
Cut 1 tablespoon shortening into 3 tablespoons flour and dash of salt. With fork stir in 1 teaspoon cold water. Gather in ball. Roll out floured surface to 5 1/2- inch circle. Place over fruit in baking cup; crimp edges and cut slits in crust.
GRANOLA TOPPING:
Mix well 2 tablespoons granola and 1 1/2 teaspoons softened butter or margarine.
CEREAL TOPPING:
Mix well 2 tablespoons crushed cereal flakes, 1 1/2 teaspoons sugar and 1 1/2 teaspoons butter or margarine.
Makes 1 serving
