cherry liqueur (or liquor), clear and clean. If you are looking for the "kick" it delivers then substitute vodka or schnapps. If you want to do without the alcohol then substitute cherry juice or unsweetened white grape juice.
# means number of therefore egg whites - 6# is 6 egg whites. In other recipes I have seen it meaning pound weight, but generally it is a number (imagine 6 pounds of egg white!)
