My husband did the research on that, so I am going to have him do his 'first ever' kitchen link post.
Hi Steve,
I obtained our knives about 5 years ago before we moved ffrom Texas to Florida. I talked to two buyers for high end "kitchen" stores and finally settled on Henckels Professional "S" (I currently have 22 knives). I bought one of each of the Wusthof and Henckels paring knives for comparison. I found no difference in the quality of the blade between brands. I use and recommend the Chef's Choice Edge Select 120 sharpener (about $130). The Wusthof Classic is comparible to the Henckels Professional "S" but seemed wimpy in the hand. The Wusthof Grand Prix and Henckels Four Star are comparible, both with molded handles. Again, of these two I liked the Henckels for feel. The Henckes Five Star is a new molded handle design and I do not like it at all. Recommendation: Buy the one that feels the best to you.
