I just received a new cookbook called "Italian Immigrant Cooking" written by Elodia Rigante. Its really is an interesting book with a lot of history... and many imigrant dishes... which are robust and old-fashioned... Not slick and nouveau. Any one who is italian/american will really appreciate this cook book not to mention those of us who just apprecite simple "everyday" italian cooking... which doesn't always spell out pasta...there is a "Rice casserole" dish made with rice and zucchini..".White bean soup" as well as "Stuffed Bell Peppers"

So last night I made "Pollo alla cacciatora" or otherwise known as "Chicken Hunter's Style/Chicken Cacciatorie" I served it over rice and had a peasant style crusty bread. Poured some wine... It was perfect since the weather here in the northeast has been rainy and cold.

Now for tonight... I am going to make from the same cookbook... Fried Calamari with Garlic sauce... served with a fresh Escarole salad... and what is left over of the crusty bread.

Happy Cooking!!! ***Chin-Chin***
