Recipe: Savory Meatball Soup

SAVORY MEATBALL SOUP

FOR THE MEATBALLS:
1 beaten egg
1 cup soft bread cubes (2 slices)
1/4 cup milk
1/2 teaspoon seasoned salt
1/2 pound ground beef
FOR THE SOUP:
1 (28 ounce) can tomatoes, undrained
2 cups water
1 1/2 cups chopped celery and leaves
1 cup finely chopped onion
1 cup diced potato
1/2 cup sliced carrot
1 1/2 teaspoons seasoned salt
Dash bottled hot pepper sauce
1 cup (4 ounces) shredded natural cheddar cheese (for serving)

TO MAKE THE MEATBALLS:
Combine egg, bread cubes, milk and salt. Add meat and mix thoroughly. Refrigerate 30 minutes.

TO MAKE THE SOUP:
Meanwhile, in large saucepan combine the remaining ingredients, except cheese; cover and simmer 30 minutes.

Shape meat into 16 meatballs; add to soup. Cover and simmer 10 minutes.

Serve in soup bowls top each with cheese.

Makes 8 servings
