Let's see if this "Yankee" can explain what Pulled Pork is. Basically it is pork pulled from a well done pork roast (either cooked in an oven or slow smoked in an outdoor smoker which cooks it very slowly and imparts a lovely smokey flavor to the meat), using either two forks to shred the meat or your hands(fingers) to shred it, while discarding the fat and bone. It is then either mixed with some barbeque sauce or is served with barbeque sauce on the top. Often, but not always, it is seved in hamburger buns as a sandwich, sometimes with cole slaw on top, before topping it with the top half of the bun. (Use the word "top" much :-) ???) It is very popular in the Southern United States and just about every Southern state has it own variation when it comes to the sauce. Tennesee and Kentucky would use a different sauce than is used in Alabama, which is different than the sauce it is served with in the Carolinas. When it comes to Texas, the barbeque of choice is probably slow smoked beef brisket. I hope that this explanation helps, Lynda :-)
