mellowed sauerkraut

Misc.
Hi Bonnie - I have to admit that I hated sauerkraut much of my life - I was only served it straight from a can.

I've found that I love it now, using good quality from the deli section (the Double-H brand available in the supermarkets in Maryland is good, too).

The method I've found makes a mellow taste and goes like this:
Rinse the sauerkraut and drain.
Sliver one onion and saute in a little canola oil until the onion starts to take on color. Add one slivered apple to the mixture and saute a few more minutes. Then add the sauerkraut.
Add some white wine and a little chicken broth and simmer the dish for about one hour.

This is also yummy simmered with pork chops and/or kielbasa.

Hope this helps you out.
