we have it often. We never miss having meat in it. I have never been disappointed with anything from Cook's Illustrated. Sometimes I decide there are two many steps involved, but it is always delicious. Your entire menu sounds so wonderful, what a fun thing for friends and family. Now you have lots of parmesan to use, also!
