DUTCH APPLE COFFEE CAKE
This recipe is from the 40's I think.
My mom made this all the time and it is yummy.
2 cups flour
1/2 tsp. salt
3 tsp. baking powder
1/2 cup sugar, divided use
1/4 cup shortening, melted and cooled
1 egg, beaten
1 cup milk
3 large cooking apples, peeled & sliced
1 tsp. ground cinnamon
1 tbsp. butter
Sift flour, measure and re-sift 3 times with salt, baking powder and 2/3 of sugar; set aside.
Stir melted and cooled shortening into egg and milk which have been beaten together; add all at once to the dry ingredients. Stir quickly til flour mixture is just dampened, then, stir 3 or 4 times more, but not until smooth. Turn into a buttered 7 x 11 x 1 1/2-inch pan and spread out in even layer. Arrange apple slices in rows over top, pressing sharp edges lightly into dough, and sprinkle with remaining sugar that has been mixed with the cinnamon. Dot with butter.
Bake at 425 degrees F for 25 minutes, til golden brown. Best served warm.
