I always shred and bag zucchini in 2-cup amounts. When I want to make bread, I remove a bag from the freezer to thaw in a bowl, and reserve most of the liquid that results. This helps keep the bread moist. Using cocoa instead of chocolate squares saves time and effort also. Baking in a bundt pan takes less time than in a bread pan. :)
