My advice is that you should trim the chicken, pork or beef of fat; use olive oil sparingly; eat plenty of fruits & salads. Herbs & spices are healthy if used in moderation. One of the best things to use is the SOFRITO which is a combination of our freshest vegetables. Rice & beans are extremely healthy & a great nourishment (you dont have to add meat). Also the viandas or root vegetables, that we eat boiled, are so very healthy.

I do almost all local recipes using my crockpot. For liquid, I only add 1/4 cup of broth or wine. For recipes using rice I do not recommend the slow cooker. I also use my slow cooker most of the time in high. If using the slow cooker for preparing your food for the afternoon after you return home, I suggest you use it in LOW.
