ROCKY ROAD CHEESECAKE
FOR THE CRUST:
1 cup chocolate wafer cookie crumbs
3 tablespoons butter or margarine, melted
FOR THE FILLING:
1 envelope unflavored gelatin
1/4 cup cold water
16 ounces soft cream cheese
3/4 cup sugar
1/3 cup unsweetened cocoa powder
1/2 teaspoon vanilla
dash salt
2 cups miniature marshmallows
1 cup heavy (whipping) cream, whipped
1/2 cup chopped nuts
TO MAKE THE CRUST:
Preheat oven to 350 degrees F.
Combine crumbs and butter; press onto bottom of 9-inch springform pan.
Bake at 350 degrees F for 10 minutes. Cool.
TO MAKE THE FILLING:
Soften gelatin in water; stir over low heat until dissolved.
Combine cream cheese, sugar, cocoa powder, vanilla and salt, mixing with electric mixer until well blended. Gradually add gelatin, mixing until blended. Fold in remaining ingredients. Pour over crust; chill until firm.
