What you are mentioning is done not only in Spain years ago but right now with my families in Scotland. Yup, the pot sits on the back of the always-on stove and each day new items are added to it. There always is a bowl of somethng from it at the noon and at the evening meal in addition to the normal meal's food. An awful lot of goodies get put in fresh daily to the leftover from the preceding meal...lentils, etc. etc.

I am answering, not on the safety value of the food, but on the practice of such cooking of stews and soups in many other parts of the world. They have a sense, from their own heritage of cooking, of what they are able to do wisely. I do not wrinkle my nose at them at all.
