You said pressure cooker. Is it a cooker or canner? A cooker is a smaller pan designed just for cooking, not safe for canning in. If it is a pressure canner, you would use the 15 lb. weight. To use the 8lb. weight, your food would be underprocessed, leaving your food at a risk for boutulism. Can you purchase a different weight to fit? The time would be the same for the 15 lb. since the canning guidelines are only listed for 10 lb. pressure.(With the 8 lb. weight, the temperature would not be high enough to kill the boutulism.)
