Hi Rachel,
I am a professional vegetarian chef and know quite a few others. The Natural Gourmet Cookery School in NYC offers just the program you are looking for - www.naturalgourmet.com I believe it is the only accredited university of it's kind in the U.S. A few of my friends are graduates. We all work in many different areas. One runs a non-profit meal and nutrition/cooking educational program. A few do catering. One is a private chef - she has worked for two household name celebrities. One works in a restaurant. And a couple of us are cookbook authors also. There are definitely many opportunities available.
I believe their program can be f/t or p/t. Should you just take a general program? Only you can make that decision. I, like Deborah Madison, have no degree, but have worked with many chefs and have learned a lot - from many and by simply doing it. Deborah hasn't done amazing things, huh? :-) It's amazing what happens and what you can achieve when you truly love what you do.
