ISO: aspiring professional veg chef

I am a huge fan of Deborah Madison. Her book, "Vegetarian Cooking for Everyone" has changed my life and inspired me to become a professional chef. I would like to get in touch with her to seek her advice about training to become a chef focusing on vegetarianism. Are there programs such as this? If so, where? Are they prestigious enough so that one could graduate and actually get a good job and survive? Are they full time or can you do them part-time and still be working to support yourself? Would it be better to attend something like a general program at the Cal Culinary Institute in SF instead? If anyone has any info I would be thrilled to hear from you. Thank you!
