I think either chard or spinach would be a very good substitute for the kale. Given a choice, though, I think I would substitute the kale with chard. BTW, this is a rather thin stew but if you smash some of the beans against the side of the pot with a spoon, it will help to thicken it.

I hope you are feeling a bit better, Karen, and that this stew will "hit the spot" :-)!
