APPLE PIE
My mother taught me how to make simple pies like this. I fell in love with apple pies after learning how to make the crust and mix the spices with the apples and have a warm delicious dessert made with my own two hands. I have to admit though I do enjoy being able to just pickup a double pie crust in the freezer at the store. LOL
Pastry for 2 crust pie
1/2 cup brown sugar
2 tablespoons flour
1 1/2 teaspoons ground cinnamon, divided use
Dash ground nutmeg
Dash salt
6 cups thinly sliced apples
1 stick (1/2 cup) butter
1 medium egg white
Vanilla ice cream (for serving, optional)
Make bottom crust and place in pie pan. Refrigerate.
Combine brown sugar, flour, 1 teaspoon cinnamon, nutmeg, and salt; add to apples, tossing lightly. Turn into pastry-lined pie pan. Dot with butter and sprinkle with remaining 1/2 teaspoon cinnamon. Set aside.
Roll out the top crust, place on top and crimp to bottom crust cutting slits for steam to escape. Brush egg white on crust to help it develop a nice browning effect without burning.
Place a cookie sheet under the pie plate to catch any overflow from the pie filling. Bake 45-50 minutes.
Best served warm, not hot, with vanilla ice cream.
VARIATION - LATTICE CRUST:
Take top crust and cut into strips and work it into a lattice work over the top of the pie and then brush with egg white and bake.
Makes 1 pie, 8 servings
