re: adding pectin

I am sorry, I should have checked the recipe closer. Yes, with liquid pectin you bring to a boil, then add the pectin, and then bring back up to a boil and boil hard for one minute.
I searched and searched for a white onion jam recipe, but this was all I could find. If I do run across one, I will post it for you later.
I have not tried onion jam yet. I have tried garlic jelly, though. I would think the red onion would give it a nice color.
