I would marinade the meat seperately in regular itatian dressing overnight or all day then cook with some veges on the george forman grill the night before
After grilling put in one of those aluminm trays and add some more dressing (or you could do a tomato based enchalada type sauce or fahita packet sauce)
could be cooked the night before stored in fridge and reheated in tray in oven before needed --- good luck

PS i did this for fahitas for our fiesta grad party back last year i posted it back then ... it worked well cooking the night before
