re: Chiplotle's Barbacoa Burrito - Chef Kent Chambliss - Doubtful

I seriously doubt the authenticity of the recipe coming from "Chipotle's". Seen this recipe cited on other sites. First I know that the recipes were developed by the founder of the restaurant, Chef Steve Ells. The recipe contradicts itself on the meat used, chuck roast vs. goat. Chiplotle's uses beef and Chambless uses goat? 2 lbs. of Avacado leaves is beyond silly. The chilies prescribed, guijillo, don't have the right taste. I bet Chipotle's uses ancho (pasilla) chilies. Chipotle's menu description mentions many of the spices and thyme and allspice are not listed. Odd how the amount of salt and pepper aren't provided. Another flaw is pushing the mixture through a sieve and using the paste on the meat--can't tell if the part put through the sieve is used (certainly not a paste) or if the remaining material is to be used. Most importantly the taste of the mixture is sort of bitter and doesn't taste like adobo sauce at all. I think this Kent Chambless recipe is the equivalent of a recipe urban legend. I will be posting my own faithful recipe.
