re: cracked cheesecake - Eggs in cheesecake
Misc.Cathy, Just offhand, without seeing the whole recipe, I'd guess your problem is too many eggs. That would be the only leavening ingredient in the cheesecake, right? So that would be what's causing it to puff up and then settle. Maybe leave out one egg, and limit the mixing time after you add the other four, and see if that helps.
